Zoo Tycoon (2001) if you want a retro zoo management game. The wildly popular Zoo Tycoon series gets set to crank up the excitement, challenge, and fun of building the ultimate zoo. The big disadvantage is its comparatively small roster of (solely extant land) animals, as modding is still quite limited (people have created new animals, but they have to replace an existing one so you don't really expand the list) which can't really compete with the thousands of animals available for the first two installments. Allows the most building freedom of all games (for instance you can create your own climbing structures and buildings by placing each element individually). Planet Zoo while not technically part of the ZT franchise is its spiritual successor, beautiful realistic graphics combined with the more complex gameplay of previous games. Zoo Tycoon (2013) is hit-or-miss, it has improved graphics compared to ZT2, however it has a simplified gameplay where building freedom is very limited as you place pre-made exhibits and can only choose set locations for food, shelter, etc. The other two I haven't played but here's what I've gathered from watching gameplay:

Most recent mods are also realistic-looking, in case you're not a fan of the original cartoony game aesthetic. The base content is a bit lacking, but this is easily fixed with mods, as you can find almost any animal from cockroaches to whales to obscure extinct animals. Animal and guest AI are much more complex and engaging, but can also be a bit buggy, particularly with mods that affect gameplay.
It's fully 3D allowing you to roam your zoo in 1st person view. However being sprite based and because of how the exhibit requirements work, it doesn't give you as much freedom compared to other games, and the animal behaviors are quite basic. With all expansions it has a pretty good roster of animals (including marine and extinct) and items and lots of challenging campaigns to play through. Zoo Tycoon (2001) is a sprite-based game with an isometric view, unlike the other options.
